Stuffed Tomatoes

Ingredients of Stuffed Tomatoes:

  • Ripened tomatoes       - 4 medium ripened
  • Chopped onion           -  1 medium
  • Chopped garlic           - 3 cloves
  • Grated paneer                 - 1/4 cup
  • Chopped curry leaves  -  10
  • Chopped coriander.       - 2 tbsp
  • Cumin seeds.                  - 1   ISP
  • Red chilli powder.          - 1 tsp
  • Turmeric powder.           -  Pinch
  • Chat masala                    - 2 tsp
  • Garam masala.                -1 tsp
  • Oil.                                 - 1 tbsp
  • Salt                        - according to taste

How to Prepare the Stuffing of Stuffed Tomatoes:

  • Heat the oil in a pan, add cumin seeds, chopped onion and garlic
  • Fry until they turn soft and golden brown
  • Now add paneer and all the spice powders and salt
  • Mix it well and saute for a couple of minutes
  • Add curry leaves and coriander; mix it well
  • Remove the pan from heat and let it cool

How to Prepare Stuffed tomatoes:

  • Pre heat the oven at 375º degrees
  • Cut the tomatoes horizontally about one inch and save the tops for later use.
  • Scoop out the pulp
  • Stuff the tomatoes with paneer mixture
  • Take a baking tray and oil spray it. Now keep the stuffed tomatoes and their tops separately into the baking tray
  • Bake them for 15 - 20 mins. Now replace the tops on the tomatoes.
  • Serve them hot with rotis.
