Roasted Asparagus Tricolor Quinoa Salad Ingredients Needed for Roasted Asparagus Tricolor Quinoa Salad:
  • Tri color Quinoa                           - 1 cup
  • Water                                            - 1 3/4th cup
  • Asparagus                                     - 12
  • Thinly sliced Sweet pepper          -  2
  • Lemon juice                                  - 1 tbsp
  • Fresh ground pepper                     - As per taste
  • Roasted pistachios                        - Handful
  • Zest of lemon                                - 1
  • Lemon juice                                  - 1 tbsp
  • Kosher salt                                    - As per taste
  • Olive oil                                        - 2 tbsp (Extra for roasting asparagus)
  How to Prepare Roasted Asparagus Tricolor Quinoa Salad:
  • Pre heat the oven at 400 degrees
  • Chop asparagus lengthwise
  • Place the asparagus on a baking sheet
  • Sprinkle salt & pepper and drizzle with enough olive oil, mix them until well coated
  • Roast them for about 10 min and keep them aside
  • In a medium sauce pan add water and salt, then bring it to boil when it boils add quinoa stir it and cover it with lid
  • Let it cook for 15 to 20 mins on low heat until water is fully absorbed and quinoa becomes fluffy
  • Prepare the dressing by whisking the lemon juice, olive oil, salt & pepper lemon zest in a small bowl.
  • When quinoa cooled add in to a large mixing bowl, add chopped pistachios, sliced peppers, asparagus then drizzle the dressing over the quinoa mixture
  • Gently mix it to combine, serve it immediately at room temperature or next day chilled
  • Tastes delicious while it's warm or chilled
