Khandvi

  Ingredients for Batter:

  • Gram flour (besan)               - 1 cup
  • Yogurt                                   - 1 cup
  • Green chilli  Ginger paste    - 1 tsp
  • Water                                    - 2 cups
  • Sugar                                     - 1 tsp
  • Asafoetida                               - Pinch
  • Turmeric powder                   - 1/2 tsp
  • Oil                                         - 1 Tsp
  • Salt

Ingredients for Tempering:

  • Mustard seeds                      - 1 tsp
  • Sesame seeds                       - 1 tsp
  • Oil                                        - 2 tsp 
  • Chopped curry leaves         - 1 tsp 
  • Chopped green chillies      - 1 tsp
  • Asafoetida                         - Pinch

 Ingredients for Garnishing:

  • Chopped coriander / cilantro
  • Red Chilli Powder (optional)

How to Prepare Khandvi:

  • Prepare a clean surface where you would spread the batter; be it a back of a greased cookie sheet or a lightly greased aluminum foil
  • Make a smooth batter by mixing the gram flour, yogurt, water, ginger chilli paste, sugar, oil, turmeric powder, asafoetida and salt
  • Mix well to ensure no lumps are there
  • Cook on a low to medium flame for 10 mins , by stirring continuously untill the mixture becomes thick
  • When the batter is still hot , spread it on the prepared surface evenly to make a thin uniform layer using a spatula
  • Once all the batter is spread out let it cool for 5- 10 mins.
  • Cut the khandvi into equal portions (one and half inch width)
  • Gently roll up the khandvi
  • For the tempering, heat oil in a pan and add mustard seeds and Sesame seeds. When the seeds crackle, add the asafoetida, curry leaves and green chillies and saute on a medium flame for a few seconds.
  • Pour the tempering over the khandvis
  • Serve immediately garnished with chopped coriander and red chilli powder
