Dum Aloo (Dry)

Ingredients of Dum Aloo (Dry):

  • Baby potatoes        - 20
  • Garlic cloves          - 3
  • Sesame seeds         - 3 tbsp
  • Coriander seeds     - 2 tbsp
  • Cumin seeds          - 2 tbsp
  • Black pepper         - 8
  • Red chili flakes      - 1 tbsp
  • Red chilli powder   - 1 tbsp
  • Turmeric powder   - 1/4 tbsp
  • Curry leaves           - 10
  • Cinnamon               - Small piece
  • Oil                          - 3 tbsp
  • Salt                         - According to taste

How to Prepare Dum Aloo (Dry):

  • Cook potatoes without peeling the skin in boiling water for 15 to 20 mins until they become tender.
  • Let them cool little bit.
  • Prick the potatoes with tooth pick.
  • Meanwhile dry roast all spices except red chilli powder and chilli flakes.
  • Grind the dry roasted spices into powder.
  • Heat oil in pan, add potatoes let them fry until they get golden brown on medium flame.
  • Add crushed garlic,spice powder , turmeric powder and salt and saute it for 5 mins
  • Add red chilli powder, chilli flakes and curry leaves  and saute for 5 more mins.
