Cherry Tomato and Rosemary Focaccia

Ingredients of Cherry Tomato and Rosemary Focaccia

  • All purpose flour            - 4 cups
  • Yeast                    - 2 1/4 tsp
  • Warm water                - 1 1/2 cups (110 Fahrenheit)
  • Salt                        - 2 tsp
  • Olive oil                    - 1/4 cup
  • Fresh ground black pepper    - 2 tbsp
  • Grated Parmesan            - 2 tbsp
  • Fresh Rosemary            - 2 sprigs
  • Cherry Tomatoes            - 15
  • Kosher salt for sprinkling

How to Prepare Cherry Tomato and Rosemary Focaccia

  • Set the oven at 425 Fahrenheit
  • Take a large mixing bowl; add yeast and warm water. Leave it for 5 minutes.
  • Now add the salt and flour and mix it thoroughly to a soft dough.
  • Cover it with a damp cloth and let it rise. Leave it for 1 hour.
  • Press the dough, in a rectangle shape, onto a well oiled baking sheet.
  • Using your fingers, make dimples all over the dough for every 2 inches.
  • Now put olive oil evenly into all these dimples. Don't skimp.
  • Then arrange the cherry tomatoes in all the dimples, pushing them down slightly into the dough.
  • Now sprinkle the rosemary leaves, sea salt, pepper and parmesan cheese, one after the other, all over the dough.
  • Bake it for 18-20 minutes, till it gets golden brown.
