Chandrakala

Ingredients  Needed for Chandrakala:

  • All Purpose Flour or  (Maida)                  - 2 cup
  • Clarified Butter (Ghee)                            - 2 tbsp
  • Khoya/Mawa                                            - 1 1/4th cup
  • Sugar                                                        - 2 tsp
  • Finely chopped Pistachio &Almonds      - 3 tbsp
  • Cardamom Powder                    - 1/2 tsp
  • Saffron                             - 1/4 tsp
  • Oil                                                             - for deep fry
Ingredients for Sugar Syrup:
  • Sugar                                   - 1.5 cup
  • Water                                   - 1 cup
How to Prepare Chandrakala:
  • Take a bowl and  add all purpose flour, and  clarified butter (ghee) ,add water slowly and mix well to  make a medium soft dough . now  cover the bowl and keep it aside for 1 hour.
  • Take a non stick pan and add Khoya/mawa   in it and roast on a low flame till it becomes soft. now add  finely chopped pistachio & Almond, cardamom powder ,saffron  and sugar ,then roast  for 1 minute and  then take them out into a bowl
  • After 1 hour take the dough , make small balls and roll them to make medium thick discs/pooris. Take one disk/poori and  place the stuffing in the center and cover it with another disk/poori. press to seal the edges , then fold the sides to make a pattern
  • Heat oil in a pan , while oil is heating start making sugar syrup ( dissolve the in water and  boil  it on medium heat until you get 1 string consistency)
  • Once oil is hot enough deep fry the chandra kala on low heat till golden in color
  • Now dip chandra kala in sugar syrup for 5 minutes and then take  them out into a plate
  • Garnish with Saffron & Pistachios
