Carrot Halwa | Slow Cooked Indian Carrot Pudding/Vegan


Carrot Halwa is a  Slow Cooked  Traditional  indian dessert made by simmering  grated Carrots in milk . This delicious carrot halwa made with home grown carrots and freshly made coconut milk. Tastiest dessert with sweetest harvest. Ghee and milk are Traditional in the Indian version.... If u prefer traditional version u may use Milk and Ghee.

Ingredients:
  • Ghee                    2Tbsp  /coconut oli
  • Carrots, peeled and grated     3 1/2  cups packed
  • cardamom         3 pods
  • fresh ground nutmeg        1/4 tsp
  • organic whole milk              3 cups/ fresh coconut milk
  • organic raw cane sugar       3/4 cup
  • Pinch saffron threads
  • coarsely chopped unsalted almond nut, pistachio nuts, dried rose petals  (optional)

How to Prepare :
  • Heat the ghee/ coconut oil  in a heavy, bottomed saucepan.  Add the grated carrots and fry for about 10 minutes on a low/ medium flame.
  • Add the milk/coconut milk and bring it to a boil. on a low /medium heat flame.
  • keep stirring in between, eventually milk will start to reduce.
  • When the milk has reduced to 75 % add the sugar and the fresh ground cardamom,nutmeg, saffron.
  • Stir well and Continue to simmer,on a medium flame .
  • Simmer the halwa till it becomes thick, add the chopped nuts and switch off the flame.
  •  You can serve the halwa warm or cold.
