Badam Halwa (Almond fudge / Gluten free)



  • 1/2 cup badam ( raw almonds)
  • 1/4 cup + 2 tbsp Ghee
  • 1/2 cup + 2 tbsp organic cane sugar
  • 10 strands saffron
  • 1/2 cup  + 1Tbsp  Milk
  • saffron a pinch (optional)
  1. Soak a generous pinch of saffron in 1tbsp of warm milk. Set aside.
  2.  Soak Almonds in boiling hot water for 2 hours.  Drain the water and peel the almonds. Once its peeled, add milk and grind it in a blender  to a grainy paste.
  3. Place the almond paste and sugar and saffron milk in the pan and keep it on stove on low flame. Keep stirring continuously.  
  4. Add ghee in intervals and keep stirring.Always cook in low flame or low medium.
  5. After all the ghee has been added, keep stirring until the mixture is slightly thick.
  6.  let it cool for some time ,Once its warm, take big spoon full  of the mixture and pack like a candy on a parchment paper.
